Pork with Ratatouille and Potatoes.
  • 1 kg tiny new potatoes
  • 1 med brown onion chopped
  • 2 cloves garlic crushed
  • 4 baby eggplants chopped
  • 2 med green zucchini chopped
  • 400g can tomatoes
  • 2 tbs fresh chopped basil leaves
  • 4 x 150g pork steaks

Preheat oven to very hot.

Place potato in lightly oiled dish

And bake on high until browned

Cook onion and garlic in a non-stick

Stir in eggplant and zucchini cook

Until tender.  Stir in crushed

Tomatoes bring to the boil.

And simmer for 5 minutes.

Cook pork in non-stick pan until

Browned and slice thickly.

Serve Pork with potatoes and

Ratatouille.
