Pork Fillet with Sweet Potato and Sesame Seed Salad
  • 600g Pork Fillets
  • 2 teaspoons sesame oil
  • ½ Cup Dark Soy Sauce
  • 2 teaspoon grated ginger
  • 600g sweet Potato peeled
  • 1 tablespoon toasted sesame seeds
  • 100g baby spinach leaves

Combine oil and ginger in a dish add pork and marinate for 15 minutes.

Place drained pork on a oven rack in the roasting pan with 1cm of water below.

And roast at 200C for 30 minutes.

Combine half the marinade with 2 tablespoons water in a saucepan and simmer for 5 minutes. Cut sweet potato into 1cm think slices and cut in half.  Cook in boiling water

Until tender.  Carve pork into 1cm thick slices and toss with sweet potato and sesame seeds.  Place spinach leaves on serving plate , top with pork mixture and drizzle hot

Marinade over the top.
