Warm Minted Lamb Salad
- 400g lean lamb fillets
- 1 clove garlic
- 2 tbs lemon juice
- 1/3 cup Chicken stock
- ½ cup Couscous
- Cooking oil Spray
- 3 med Tomatoes
- 1 small green cucumber
- 150g mixed salad leaves
- 2 tbs chopped fresh mint
Dressing
¾ cup low-fat yoghurt
3 tsp lemon juice
¼ cup water
pinch ground cumin
1 clove of garlic
1 tsp low-salt soy sauce
To make dressing combine all ingredients in a small bowl and mix well.
Combine lamb, garlic and juice in a bowl. Mix well and refrigerate overnight.
Bring stock to the boil in pan add couscous . Heat pan and coat with cooking spray add coucous cook stiring until grains are separated. Remove from pan and cool. Cook lamb by grilling or barbq. Slice tomatoes and cucumber thinly. Place salad leaves cucumber, tomatoes and lamb on serving plate. Drizzle with dressing ,sprinkle with mint and couscous.
