Sweet Chilli Chicken
  • Chicken Fillets
  • 2 tsp minced garlic
  • 1 tsp minced chilli
  • 1 tsp minced ginger.
  • 1 large onion
  • 4 tbs sweet chilli sauce.
  • 1 tsp curry powder.
  • 1 tbs olive oil.

Score the chicken fillets across both sides.  Sprinkle the curry powder over the Chicken and coat in flour.

In a non-stick pan with a spray of olive oil sauté the onion, garlic, ginger and chilli until they are soft .  In the same pan add the olive oil and cook the Chicken on both sides until brown and cooked through.  Pour the sweet chilli sauce over the fish and cook for 2 extra minutes.  Serve on platter with sauce mixture over the top and with steamed rice and Chinese vegetables.
