Peanut Chicken Salad
  • 25 peanuts
  • ¼ cup lime juice
  • 11/2 tbs soy sauce
  • 1tsp minced garlic
  • ½ cos lettuce
  • 1 punnet cherry tomatoes cut in half
  • ½ cup snow peas
  • ½ barbecue chicken.

Heat oven to 180c and roast peanuts until golden.

Combine the lime, soy sauce,garlic, chilli sauce and sugar in a small bowl..

Arrange the salad vegetable on 4 serving plates and top evenly with chicken slices.

Drizzle with dressing and sprinkle with peanuts.
