Chilli Chicken and Rice In Lettuce Leaves
  • 300g Chicken Mince
  • 1 red onion finely sliced
  • 2 teaspoons minced ginger
  • 2 teaspoons of minced garlic
  • 1 red capsicum finely chopped
  • 1 tablespoon fish sauce
  • 1-2 tablespoons sweet chilli sauce
  • 2 tablespoons chopped fresh coriander
  • 12 large Iceburg Leaves
  • 3 Cups of Cooked Basmati Rice

Spray a nonstick wok or pan with oil and heat. Add the onions and cook for 2 minutes.

Add the chicken mince, garlic and ginger and cook for about 5 minutes.

Add the capsicum and cook for another 3 minutes.

Add the fish sauce and sweet chilli sauce.  Stir in the coriander

To serve spoon the chicken mixture and rice into the lettuce leaves and roll up

To eat with your fingers.
