Chicken Drumsticks with lemon and Garlic
  • 8 large Chicken Drumsticks
  • 3 teaspoons salt flakes
  • 1 teaspoon garlic powder,
  • 1 teaspoon parsley
  • ½ teaspoon ground paprika
  • 1 large lemon, rind finely grated
  • 2 tablespoons olive oil
  • 2/3 Cup self raising flour
  • Olive oil cooking spray

Preheat oven to 220.

Combine salt flakes, garlic powder, parsley, paprika and lemon rind in a bowl

Add oil and stir to combine.  Place drumsticks in a bowl. Spoon over oil mixture

Rub chicken to coat.  Place flour in a snap lock bag.  Add drumsticks, 1 at a time and toss

To coat.

Place drumsticks in prepared roasting dish. Spring both sides with oil

Roast drumsticks for 20 minutes turn spray and cook for another 20 minutes.

Serve with fresh vegetables or salad.
